And the seafood cakes continue (our version of pastry cooking). This week’s Chef’s Choice is Wild Sockeye Salmon Cake, served with roasted garlic mashed potatoes, fresh corn, carrot, and asparagus, and home-made tartar sauce. Enjoy it with a sauvignon blanc and toast the day away.

In light of this week’s winter weather, today’s Chef’s Choice is a Joe’s take on rustic comfort food: Forrest and Field Mushroom Risotto. Sitting inside a crispy grana padano cup (yes, you read that right, it is a cup made of cheese), our creamy risotto is mixed with three types of wild mushrooms (that’s oyster, cremini, and Hon-Shimeji for all you mushroom lovers), and finished with parsley-garlic pistou. Don’t let the image fool you. This is one hefty cup.

To give our guests the opportunity to try something new, every month our Beverage Manager Jennifer Hennessey features a winery currently not offered on our wine list. Of course it goes without saying that the winery must hail from a region that perfectly compliments our dishes, and this month that happnes to be Hahn Winery.
2009 Chardonnay Santa Lucia Highlands
2009 Pinot Noir Monterey
2010 Cabernet Sauvignon Central Coast
The Hahn Winery Story
The spectacular beauty of California’s central coast is probably the best-known region in all of California for its unique lifestyle. Monterey County’s dramatic ocean scenery, historic communities, artistic culture, verdant pine forests, and bountiful agriculture have beckoned adventure-seekers, seafarers, artists, writers and vacationers for over 100 years. And the 99 miles of breathtaking Pacific coastline is something no other California county can boast.
With an inspiration to raise Monterey wines to the highest level, the wines of Hahn Winery are created with a philosophy that all great wines are special – akin to the region they were grown in. The Hahn wines celebrate everything that is Monterey – unique in thought, style and setting. Wines of Monterey Distinction.

Executive Chef Wayne Sych wanted to bring a piece of the east coast to Joe Fortes, and with that comes this week’s Chef’s Choice and the latest item on our menu: the Lobster Roll.
Our version is made with east coast Atlantic lobster, hand-peeled shrimp, and classic remoulade, all in a house-baked bun griddled in butter. Have it with a side of baby greens dressed in house vinaigrette with a balsamic glaze.
