In light of this week’s winter weather, today’s Chef’s Choice is a Joe’s take on rustic comfort food: Forrest and Field Mushroom Risotto. Sitting inside a crispy grana padano cup (yes, you read that right, it is a cup made of cheese), our creamy risotto is mixed with three types of wild mushrooms (that’s oyster, cremini, and Hon-Shimeji for all you mushroom lovers), and finished with parsley-garlic pistou. Don’t let the image fool you. This is one hefty cup.

Executive Chef Wayne Sych wanted to bring a piece of the east coast to Joe Fortes, and with that comes this week’s Chef’s Choice and the latest item on our menu: the Lobster Roll.
Our version is made with east coast Atlantic lobster, hand-peeled shrimp, and classic remoulade, all in a house-baked bun griddled in butter. Have it with a side of baby greens dressed in house vinaigrette with a balsamic glaze.

After 26 years with legendary restauranteur Bud Kanke, we are excited to welcome our new owner, steak powerhouse David Aisenstat, to the helm. We look forward to continuing our reputation for outstanding hospitality and great seafood under the Joe Fortes name. All current management and staff, led by your very own Maitre’d Frenchy Gagne, General Manager Scott Garrett, and Executive Chef Wayne Sych, will continue to serve our many regular guests and visitors.
Bud Kanke, 72, who has founded, opened, and operated 11 restaurants in the past 40 years, looks forward to partially entering retirement. He will remain with Joe’s as an advisor for the next several years.
