This week’s Chef’s Choice is an example of how a simple recipe combined with fresh ingredients can make for the greatest dish (with the help of a Joe Fortes chef, of course).
Our Heirloom Tomato Salad is made with fresh local heirloom tomatoes and handmade mozzarella cheese, drizzled with balsamic gastrique and extra virgin olive oil, and finished off with a sprinkling of fleur de sel and freshly ground pepper.

In light of our province’s new liquor laws, we are excited to announce our new corkage policy:
- Guests are invited to bring one bottle for every four people in their party, for a corkage fee of $35.00.
- We welcome any commercially produced wine (no home brews allowed) that is not on our wine list. This includes wines on our list that are a different vintage.
Simply present your bottle of wine to guest services upon entering the restaurant and we’ll be happy to take care of the rest.

We spent a lovely morning with Dawn Chubai and Breakfast Television showing viewers how to to crack your way through crab and lobster, make our Heirloom Tomato Salad (hint: fresh ingredients are key), stack together our new Strawberry Shortcake, and mix everyone’s favourite summer cocktail, the White Sangria.

Though recent weather may have us fooled, summer has indeed begun. To celebrate, we’re introducing our Summer Wine Feature: The Hess Collection.
Wine, art, and vineyards create a singular identity for The Hess Collection Winery; the synthesis of these elements show founder Donald Hess’ dedication to producing great wines from great vineyards. Hess established his first Mount Veeder vineyard in 1978, which marked the beginning of The Hess Collection Winery in the Napa Valley. The winery was founded on Hess’ belief that quality and goodness are the best practices.
