Who can resist a plate of perfectly seasoned sweet potato fries? We can’t. Especially when they’re  toasted on the outside and soft on the inside.
The star ingredient of this week’s Chef’s Choice is often mislabeled as a yam in grocery stores. Whereas yams come from the lily family, sweet potatoes derive from the morning glory family and are known to have fewer calories and more beta-carotene, an antioxidant believed to protect against certain cancers.
