This month we’re featuring Sandhill Wines on our wine list. Located in our beautiful province of British Columbia, they operate around a key philosophy: natural is best. Just how exactly?
To create great wine you must start with the soil and vines, so our focus at Sandhill is the vineyards. Next, our winemaking techniques are designed to enhance, not interfere with, the naturally occurring fruit flavors. Two words you will hear frequently from Howard Soon to describe his winemaking technique are “gentle” and “non-interventionist”. Great fruit, helped along the way when necessary using a soft touch, will result in great wine”.
