BLUEBERRY FRANGIPANE with lemon curd, almond, limoncello honey for $9.50

Frangipane is a filling made from or flavoured with almonds. This filling can be used in variety of ways including cakes, tarts and other assorted pastries, such as the Jesuite. Originally designed as a custard tart flavoured by almonds or pistachios, it came later to designate a filling that could be used in a variety of confections and baked goods. Frangipane is one of France’s many traditional desserts.

INTRODUCING BLACKBERRY TREASURE


Introducing Blackberry Treasure on our Cocktail List!
Blackberry Treasure1oz. Cazadores Blanco
.25oz. Cassis
.25oz marachino liqueur
.5oz fresh squeezed lemon
2 dashes of orange bitters
2 fresh blackberries.

muddle blackberries with orange bitter in a mixing glass. Add ice and rest of ingredients. Shake and strain over ice into a rocks glass. Garnish with a lemon wheel.

Perfect drink to have with some oysters on our patio in the sun!

The Blackberry Treasure is a balance of fruit and citrus. Idea behind it was to make something for the patio that was simplistic in nature, but complex in flavour that could pair well with oysters and seafood from our menu. The base of the cocktail is Cazadores tequila blanco- a perfect match with oysters and citrus. Other liqueurs involved are L’Heritier-Guyot Creme de Cassis, fresh hand picked blackcurrents from Dijon France and paired with Luxardo Marachino Liqueur adding a beautiful nose of aromatics and a deeper richer flavour that adds to the fresh muddled blackberries. To balance out the sweetness of the liqueurs and to add some complexity to the cocktail we use orange bitters and fresh lemon. The lemons acidity finishes off the cocktail and brings it to life making for a refreshing patio cocktail. – Beverage Manager, Neil Charlesworth
